Quinoa Taco Bowls

About the Recipe

This recipe will help you learn to cook from your heart! I don't really know the measurements I use because I make variations of this all the time.

Ingredients

  • 1 lb ground beef

  • 1 can beans of choice

  • 1 can diced tomatoes

  • 1/2 cup frozen or canned corn

  • A few smatterings of taco seasoning

  • Smattering of onion powder

  • Smattering of chilli powder

  • Spoonful of minced garlic

  • 3 cups cooked quinoa

  • Dairy-free soy-free cheese (I like the Daiya brand)

Preparation

Step 1


Get your quinoa cooking and start your ground beef thawing if it was frozen. Gather other ingredients in the meantime.



Step 2


Once the ground beef is thawed, cook over medium heat in a large non stick pot. Use spatula to break up meat as it cooks. Add the taco seasoning, onion powder, chilli powder, and minced garlic to the meat as it cooks. Once it is cooked through, you can taste a bit and see if it is seasoned well or if you need to add more of something.



Step 3


Once the meat is cooked through, add the beans, tomatoes, and corn to the pot. Stir together and let simmer on low heat for about 10 minutes to thaw the corn and
