About the Recipe
A different take on the traditional Haluski dish... because I love meatballs!

Ingredients
1 lb Italian pork sausage
about 1 c quick minute oatmeal
1/3 c coconut milk
Olive oil
1 cup diced yellow or white onion
1 1/2 lbs green cabbage,cored and chopped up
1/2 cup water
1 tsp salt
1/2 tsp ground pepper
1/2 of a 12 oz package (or whole and have leftover noodles :D ) egg-free wide pasta ribbons

Preparation
Step 1
Preheat oven to 350 degrees F. Lightly grease a cookie sheet, or cover it in parchment paper. In a medium bowl, mix pork sausage, oats, and coconut milk. You may need to use your hands to make sure it is well mixed. Roll mixture into 1" balls using your hands. Once rolled, place on cookie sheet.
Step 2
When all the sausage mixture is made into balls, put cookie sheet in preheated oven for 20 - 30 minutes. Slice one meatball open to see if center is cooked through, or use a meat thermometer and make sure the temp is 145 degrees F. Remove from oven when done.
Step 3
Put a large pot or sauce pan over medium heat. Put in a little bit of olive oil and the onions. Saute until the onions are soft and clear. Add the water and all the chopped cabbage. Cover with a lid and let the cabbage cook down a little. Check the cabbage every few minutes. Sprinkle with the salt and pepper when it is easy to stir the cabbage. Turn off the heat when the cabbage is soft to your liking.
P.S. You may need to add more water if it all boils out. The water helps to steam the cabbage.
Step 4
While the cabbage is cooking, cook the noodles according to the package instructions. Once the noodles and the cabbage are done, drain both, and combine together in a large bowl. Use tongs to mix them together.
Step 5
Serve noodle and cabbage mixture topped with meatballs and olive oil if desired.
